据霸州网友张先生说:9月11日,一位永清的朋友告诉我,他家的玉米地里有很多圈(juan)头,前两年有一回地里产了很多,但是现在圈头产的比之前少了一些。还拍了个视频发给我,让我看看,我很喜欢吃圈头,正准备去他家里拿点吃呢。

视频里长在玉米上的这种菌类,被大家叫做圈头,是一种可食用的真菌,叫做玉米黑粉菌,我们霸州人叫它圈头。视频里这些圈头的大小、形状不定,大部分是瘤状的。别看这些圈头长得丑,但这是咱们霸州老百姓喜欢吃的美食。

在咱们霸州,小小圈头被广大网友们发明出了多种吃法,有的人喜欢过开水凉拌着吃,最原汁原味,放上蒜泥、香油、辣椒油,成了!尤其是香油淋上的那一瞬间,香味儿就会从碗里迸发出来,还没进家门口就能闻见。有的人讲究,剁成馅儿,包成了圈头猪肉的饺子,饺子皮薄馅大,圈头口感也很嫩。

另据霸州网友王女士说:我小时候吃过我妈做的圈头,她总是和排骨一起炖,那时候不经常吃排骨,所以我一直记得那个味道,很鲜美,里面的圈头可以把排骨的鲜味提出来,排骨肉嫩而不柴,圈头也有一种独特的香味儿。

圈头不止吃法众多,而且还有药用价值,可以用来治疗血虚、津液不足、口干舌燥、热病气阴两伤,烦倦口渴等症;对于心神不安、脾胃虚弱、倦怠食少、脘腹作痛或食物、药物中毒者也有一定作用。
